Vegan Maple, Pecan & Apple Bircher
ingredients
- 200g rolled oats (or gluten free oats)
- 100ml apple juice
- 1 tsp ground cinnamon
- 50ml maple syrup
- 20g chia seeds
- 1 large apple
- 400ml soya milk (or non-dairy milk of choice)
- 25g pecan nuts (almonds and cashews work well here too)

method
- Grate the apples.
- In a large bowl, mix together the oats, apple juice, cinnamon half of the maple syrup, the chia seeds, soya milk and grated apple.
- Leave the mixture in the fridge for several hours, or ideally overnight (you'll know the bircher is ready once the oats have absorbed the apple juice and soya milk)
- ASSEMBLY: Once ready, divide the mixture equally into the
bowls or tuppaware pots. Top with the pecan nuts and the remaining maple syrup and serve or store in the refrigerator to enjoy later.
