Lemon & Coriander Humus
ingredients
- 2x cans of chickpeas, drained
- 2 large garlic cloves
- 3 tbsp. of Greek yoghurt
- 3 tbsp. of tahini paste
- Zest of one lemon
- 15g coriander, chopped
- Salt and pepper to taste

method
1. Combine all the ingredients into a food processor and blitz until fairly smooth (make sure to scrape the mixture down the sides of the processor)
2. Once you have reached the desired consistency of hummus, add seasoning to taste and remove from the food processor.
3. Add to a serving bowl, garnish with some coriander sprigs and a drizzle of olive oil (optional). Serve with some warm wholemeal pitta bread or crudités!
Top tip: This hummus will keep well in an airtight container in the fridge for 4-5 days.
