Grilled Tofu & Vegetable Skewers
ingredients
- 400g extra firm tofu
- 2 medium courgettes, thickly sliced
- 2 large bell peppers, cut into 3cm pieces
- 2 medium red onions, cut into wedges
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Pinch salt and pepper
To serve (optional):
- Freshly squeezed lemon juice
- Handful flat leaf parsley (finely chopped)

method
- Start by patting the tofu dry with a clean tea towel. Then cut the tofu into 2cm cubes. (n.B. If not using extra firm tofu, you will need to press your tofu to remove the excess liquid. Wrap it with a dry towel and place a cast iron pan or heavy chopping board on top to press out more of the liquid. Leave to stand for around 15 mins, before cutting into cubes)
- In a large bowl, whisk together 1 tablespoon the olive oil, cumin, smoked paprika, onion powder, garlic powder and a pinch of salt and pepper
- Add the tofu cubes to the bowl and toss to ensure the tofu is well coated in the mixture.
- In a second bowl add the remaining olive oil with a pinch of salt and pepper and add the vegetables to the mix and toss well to coat
- Thread the veg and tofu alternating each type, onto metal or wooden skewers that have been pre-soaked in water
- Place the skewers on the BBQ and grill until the tofu and veggies are charred at the edges and have grill marks, turning regularly
- Remove from the BBQ and squeeze over fresh lemon juice and scatter over the parsley (if using), before serving
These skewers can also be cooked under the grill or using a stovetop griddle pan (simply set your grill to high)
These skewers are also delicious made with halloumi!
