Chilli Chargrilled Broccoli, Spinach & Roasted Squash Salad

- 1 Head of broccoli, cut into florets
- 1 small butternut squash, cubed
- 100g spinach
- 200g shallots or red onion
- 2 tbsp rapeseed oil
- 1 tsp crushed chilli flakes
- 1 tsp ground turmeric
- handful of mint leaves (optional)

method
- Preheat the oven to 220 degrees Celsius. Place the cubed butternut squash, broccoli florets and onion on a baking tray. Drizzle everything with 1 1/2tbsp olive oil and sprinkle with 1/2 tsp salt, chilli and turmeri . Place in the oven to bake for 20 minutes until the butternut squash is tender.
