Broccoli Hummus
ingredients
- Stem of 1 large crown of broccoli
- 1 1/2 tbsp tahini
- 1 tsp lemon juice
- 1 tsp olive/rapeseed oil
- 1 small clove of garlic
- Handful fresh parsley
- Pinch salt & Pepper

method
- Bring a pan of water to the boil.
- Add the broccoli stalk and cook for 5 mins. Once ready, remove the stalk from the pan and place in a bowl of cold/iced water to cool.
- Once cool, remove the broccoli stalk from the water and pat dry with a cloth/paper towel.
- Add the stalk to a blender/food processor along with the tahini, oil, garlic, parsley and lemon juice.
- Blend until smooth, scraping down the sides of the blender if needed.
- Season to taste before transfer into a serving bowl.
*Delicious served with warm flatbread or crudités. Or try spreading into, sandwiches, wraps or on top of salads.
