Chocolate, Coconut & Avocado Mousse

- 1 tbsp cocoa powder
- 4 tbsp maple syrup (or as required to taste)
- 1 avocado, skin and stone removed
- 160g coconut cream
- 20g desiccated coconut

method
- Blend together the avocado, coconut cream, maple syrup and cocoa powder in a food processor and blitz until smooth.
- Place mixture into serving glasses and top with the desiccated coconut.
- Chill in the fridge overnight or minimum 2 hours.
