Traditional Caribbean Deep Flavoured Beef Stew
ingredients
- 500 g Beef Chuck/Beef Braising Steak, diced
- 100 ml Cold Water
- 2 Spring Onions
- 2-3 cloves of Garlic
- Medium White Onion
- ½ tsp Cracked or Ground Black Pepper
- 5 g Ginger (about a 2-inch piece)
- 300 g Tomatoes
- 70g Jamaican Jerk Paste
- 4 sprigs Fresh Thyme
- 20 ml Rapeseed Oil
- Pinch Salt to taste

method
- Peel and finely chop the garlic, ginger, and onion.
- Mix with the beef and black pepper. Leave to marinade overnight.
- Roughly dice the tomatoes.
- Heat the oil in a pan. Brown the marinated beef mixture.
- Add the vegetables to the beef along with the Jamaican Jerk paste and cold water.
- Add the thyme and chopped tomatoes.
- Simmer on the stove over a low heat for 90 minutes or until the beef is tender.
- Top the dish with sliced spring onions before serving.
