Sriracha Roasted Cauliflower in a Soft Taco
ingredients
- 2 tbsp olive or rapeseed oil
- 1 large or two small cauliflower heads
- 1 tbsp honey
- 1 tbsp tomato puree
- 1 tbsp siracha
- 1 tsp garlic powder
- 1 tsp ground coriander
- 1 tsp cumin
- 2 tsp paprika
- 8 mini wholewheat tortillas
Optional to serve:
- Coleslaw
- avocado, diced
- Coriander

method
- Heat oven to 180°C. In large bowl, combine together oil, lime juice and honey. Whisk in tomato paste and then spices and a sprinkle of salt and pepper.
- Add cauliflower and toss to coat. Arrange on a baking tray lined with parchment and roast until golden brown and tender, around 20 minutes.
- Spoon cauliflower into tortillas and top with coleslaw, avocado and coriander (optional).
