
Spiced Apricot-Apple Energy Bars
ingredients
- (180g) 1 ½ cups dried apricots chopped
- (90g) ¾ cup “Bio &Me” Apple & Cinnamon porridge (other brands available)
- (90g) ¾ cup finely shredded unsweetened coconut
- 6 tbsp tahini
- 3 tbsp honey
- ¾ tsp ground ginger
- Pinch of salt

method
1.Combine apricots, “Bio & Me” Oats coconut, tahini, honey, ginger and salt in a food
processor.
2.Process for about 1 minute, scraping down the sides as necessary, until the mixture is
crumbly
3.With wet hands pressed into a suitable mould, ideally leave overnight (or at least several hours) before cutting with a sharp knife.
