
Salmon Grain Bowl
ingredients
- 1 pouch brown wholegrain microwavable rice (cooked according to packet instructions)
- 1 can green lentils (drained and rinsed)
- 1 poached salmon fillet (you can buy these pre-cooked)
- 2 large handful spinach
- 2 large handfuls kale (blanched in boiling water)
- 50g cucumber, finely sliced
- 1 tsp fresh dill
- 1 tsp honey
- 1/4 tsp garlic powder
- 10ml vinegar
- 1 tsp lemon juice
- Lemon zest
- 30ml olive oil

method
- Start by making the salad dressing. Combine the honey, lemon juice & zest, vinegar, olive oil and garlic powder in a bowl and whisk until well combined.
- Then move onto building your salad grain bowl.
- Empty the packet rice into a bowl and mix together with the prepared lentils.
- Spoon the grain mix in the centre of 2 serving bowls, then flake the salmon fillet into each bowl.
- Divide the kale, spinach and cucumber between the bowls.
- Dress with the fresh dill, then drizzle some of the lemon dressing over both salads before serving.
