Mini Filo Mince Pies
ingredients
- 400g jar of mincemeat
- 270g pack of ready rolled filo pastry
- 20g butter, melted
- 50g flaked almonds
You will also need a 12-hole muffin tin

method
- Preheat the oven to 200C/180C fan.
- Lightly brush the holes of the muffin tin with a 1/3 of the melted butter.
- Cut the filo sheets into quarters to make small squares, then use one square each to line the holes.
- Brush the squares in the tin with the 1/3 the melted butter, then place a second filo square on top, turning it at an angle, to form triangles at the edges.
- Fill each pastry case with a heaped tablespoon of mincemeat.
- Brush the edges of the pastry with the remaining 1/3 of the butter, then sprinkle over the flaked almonds
- Bake in the oven for around 20 minutes or until golden brown and crispy. Enjoy!
