
Mini Coconut & Blueberry Flapjack Bites

- 400g jumbo oats
- 90g coconut chips
- 8g chia seeds
- 60g maple syrup
- 90g honey
- 60g coconut oil
- 200g blueberries
- 50ml water
- pinch salt

method
- Preheat oven to 160C
- Mix the chia seeds and water together and leave to soak for 30 mins.
- Warm the maple syrup and 3/4 of the honey together.
- Combine the oats, coconut flakes, blueberries and soaked chia seeds with the water. Then add the sea salt.
- Add the warm honey mixture and combine well.
- Line a tray with parchment paper and add the oat mix and press down well ensuring even coverage of the tray. Bake in the oven at 160 for 15 mins.
- Once the 15 minutes is up, remove the tray from the oven and drizzle on the rest of the honey over the top of the baked oats and return to the oven for a further 10 mins.
- Remove from the oven and chill
- Once chilled remove from the tray and cut into 30 equal bite-size pieces.
- Wrap flapjack pieces and store in an airtight container for up to 3 days.
