Maple & Thyme Roasted Root Veg
ingredients
- 3 large carrots, peeled and sliced lengthways
- 3 large parsnips, peeled and sliced lengthways
- large red onion, peeled amend chopped into wedges
- 10ml maple syrup
- 10ml olive oil
- large sprig of thyme
- pinch salt and pepper

method
1. Heat the oven to 200C/180C fan/gas 6.
2. Line a baking tray with baking parchment and set aside.
3. Once the veg is peeled and sliced, toss in a bowl with the olive oil, thyme, maple, salt and pepper.
4. Spread evenly onto the baking tray and roast for 30-40minutes, or until golden and crispy.
