Loaded Hot Dogs

- 1 large red onion
- 1 tbsp Balsamic vinegar
- 1 tsp brown sugar
- 1tbsp veg oil
- 1 apple
- ¼ head white cabbage
- 1 carrot
- 1tsp honey
- 1tsp wholegrain mustard
- 2tbsp low fat Greek yoghurt
- 4 mini wholemeal finger/sub rolls
- 4 x lean sausages

method
- Start by preparing the slaw. Peel and grate the carrot, finely slice the cabbage and chop the apple into matchstick-sized pieces. Toss into a large bowl and then add the honey, mustard and Greek yoghurt and stir to coat. Set aside whilst you preparing the remaining ingredients.
- Place the sausages on a grill tray and place under the grill.
- Meanwhile finely slice the onion. Heat the oil in a frying pan, then add the onion. Cook for a couple of minutes until they begin to soften, then add the sugar and balsamic vinegar and cook down until they are sticky and caramelised.
- Turn the sausages to ensure they cook evenly on all side. You'll know when they're done once the juices run clear and they are golden brown in colour.
- Once the sausages are ready, it's time to assemble the hot dogs - slice the wholemeal sub rolls lengthways, pile on the slaw, followed by the sausages and finally the caramelised onions.
