Lamb & Minted Yoghurt Sourdough Sandwich

- 2x slices sourdough bread
- 1 tbsp natural low fat yoghurt
- 1 heaped tsp mint sauce
- 2x slices cooked roast lamb
- Handful fresh rocket leaves
- Pinch pepper & salt

method
- Start by cutting a couple of slices of sourdough bread and place in the toaster or under the grill to toast.
- Whilst the bread is toasting, carve a couple of slices of lamb.
- In a small bowl, mix together the mint sauce, pepper and natural yoghurt.
- Once the bread is toasted, it's time to layer up the sandwich; spread 1/2 minted yoghurt onto one piece of bread, top with the lamb, followed by the rocket and finally the remaining minted yoghurt.
