Salmon Tikka Masala
ingredients
- 4 salmon fillets (approx. 120g each), cut into 3cm chunks
- 1 tsp ginger puree
- 2 tsp garlic puree (or 4 garlic cloves)
- 100g Tikka Masala curry paste
- 3 tbsp rapeseed oil
- 200ml water
- 400g can chopped tomatoes
- 150g half fat natural Greek yogurt
- 2 tsp honey
- Coriander, leaves roughly torn to serve

method
- Preheat the grill.
- For the marinade: Make a paste with the ginger, garlic and 1 tbsp of the oil then mix together with 1 tbsp of the yogurt and 50g of Tikka Masala paste. Stir through the salmon pieces allowing to marinate for at least 2 hours in the fridge.
- For the sauce: Heat the remaining oil (2 tbsp) and add the remaining Tikka Masala paste and half of the water. Cook for 3-4 minutes then add the remaining water and cook for a further 3-4 minutes. Add the tomatoes and allow to simmer for 20 minutes then blend until smooth adding a little water if needed and season. Allow to cool until needed.
- To finish the curry: Spread the salmon out evenly on to a tray and under a pre-heated grill for 3-4 minutes, turning to ensure even cooking.
- Return the sauce to the hob and bring to the boil, add the remaining yogurt and honey then reduce the heat, add the salmon and finish with the coriander.
Serving suggestion: serve with brown rice and steamed green beans. For a lower calorie option serve with cauliflower rice instead of brown rice.
