Homemade Mocha Energy Balls
ingredients
- 100g dates, pitted
- 100g cashew nuts
- 30g chia seeds
- 5g cacao/cocoa powder
- 40g maple syrup
- 10 g instant coffee powder or granules
- A couple of drops of vanilla essence

method
- Put the cashews, dates, vanilla and maple syrup in a blender & pulse until smooth.
- Then add the cacao/cocoa, chia seeds and coffee and pulse again until the mixture comes together.
- Roll into 10 even balls.
- Place in the refrigerator to firm up for at least 30 minutes.
- Enjoy as a mid-morning or on-the-go snack!
These energy balls are great to prepare ahead and will last for up to 1 week in the refrigerator
