
GF Vegan Scones

- 340g gluten free flour
- 180ml gluten free oat milk
- 90g margarine
- 50g caster sugar
- 10g baking powder
- 150g raisins
- 2g salt
- zest 1 lemon

method
- Pre heat the oven to 200°C.
- Sieve the flour, salt and baking powder into a bowl.
- Dice the maragrine into small cubes and put into the flour bowl.
- Using your fingertips rub the margarine into the flour until it resembles breadcrumbs.
- Make a well in the centre add the oat milk, lemon zest and raisins. Mix together and knead into a dough.
- On a floured surface fold the dough and knead it until its formed and soft. Using a rolling pin roll it out to 2 cm thick.
- Using a round cutter (6-7cm) cut the dough into individual circles. Re roll the dough and keep cuting circles until there is none left.
- Place the scones onto a lined baking tray (with parcement) with space between them. Brush them with oat milk.
- Bake for 19-25 minutes they should rise and have a nice colour to them.
- Allow to cool on a cooling wrack.
