Fridge Frittata
ingredients
- 200g leftover new potatoes, sliced
- 100g leftover veg, we used tender stem broccoli
- 1 tbsp of olive oil
- 1 red onion, finely chopped
- 6 eggs, beaten
- 40g of cheddar
- 30g goats’ cheese
- Salad leaves to serve

method
- Heat the grill to a high heat. Prepare your vegetable and potatoes, sliced both into bite sized chunks. Dice the onion, grate the cheddar, and crumble the goats’ cheese and set aside.
- Heat the olive oil in a deep pan and add the red onion. Cook until slight caramelized and soft, around 8-10 minutes.
- Meanwhile, beat the eggs in jug and stir through the grated cheddar.
- Once the onions are cooked, pour over the egg mixture. Scatter over the remaining goats’ cheese and, sliced potatoes and tender stem broccoli.
- Place under the grill for 5-10 minutes until cooked all the way through and golden brown.
- Slice into wedges and serve with salad leaves!
