Buddha Bowl Dalai Lama Box
ingredients
- 300g broccoli, steamed
- 400g cooked wheat/soba noodles
- Small thumb ginger
- 1 tbsp soy sauce
- 1 green chilli
- 1 tbsp honey
- 1 medium aubergine
- Drizzle olive oil
- 100g cucumber
- 1 tbsp miso paste

method
- Wash and cut the aubergines into 2cm squares. Toss with the olive oil and roast at 200c for 12min until lightly coloured. Allow to cool slightly.
- Mix the honey and miso paste together and dress the aubergines with the honey and miso paste whilst they are warm set aside and leave to cool.
- Wash and slice the green chilli thinly.
- Wash the cucumber and cut into thin matchsticks/julienne and peel and grate the ginger.
- Dress the cold soba noodles with the soy sauce and mix in the cut cucumber and grated ginger.
- Assemble all the elements individually in bowls and/or boxes. Steamed broccoli, the noodles, cucumber, & ginger, green chilli, aubergine and serve with the honey & miso dressing - enjoy!
