Basil Pesto Carrots
ingredients
- 600-900g bag of carrot, sliced lengthways
- 1 tbsp of olive oil
- 2 tbsp of basil pesto
- Salt & pepper to taste

method
1. Heat the oven to 200C/180C fan/gas 6.
2. Line a baking tray with baking parchment and set aside.
3. Once the carrots are sliced and washed, toss in a bowl with the olive oil, basil pesto, salt and pepper.
4. Spread evenly onto the baking tray and roast for 10-15, or until golden and crispy.
