Banana 'nice' cream

method
- Start by peeling & chopping the bananas into rough chunks or slices. Place in a freezer-proof container (or freezer bag) and freeze for at least 8hrs or overnight.
- When completely solid, put the bananas into a food processor, together with the milk and blitz on a high speed for 1-2 mins. (You may need to add a little more milk to help the bananas completely break down and blend together).
- When ready, the mixture should be soft and creamy. Serve immediately as a soft-serve ice cream.
- Or, for a firmer ice cream texture, transfer the mix to a freezer-proof container, cover and return to the freezer for at least 1-2 hrs. If serving from the freezer allow to sit at room temperature for a few minutes until scoopable.
- Delicious served with a handful of fresh berries. Enjoy!
THIS IS A GREAT ZERO-WASTE RECIPE! Whenever you have ripe or overripe bananas, chop them up and freeze them, so you can make this tasty nice cream whenever you like.
