Avocado Baked Eggs
ingredients
- 1 large avocado
- 2 eggs
- Pinch salt
- Pinch pepper
- Red chilli, finely slices (optional)
- Coriander or parsley (optional)

method
- Preheat the oven to 180C
- Carefully cut the avocado in half and remove the stone
- Place the avocados halves flesh side up on a baking tray
- Crack one egg into a small dish and carefully spoon the yolk into the hole of one half of the avocado, then carefully add the white (you might not be able to fit the whole egg white into the flesh)
- Repeat this step with the other half of the avocado and second egg
- Season with salt and pepper then bake in the oven for around 15 minutes until the egg whites are set
- Once cooked, remove from the oven and garnish with the sliced chilli and fresh herbs before serving
These are delicious served with wholemeal bread or seeded crackers and make a delicious savoury breakfast/brunch
