Aromatic Tarka Dhal Spiced Lentils
ingredients
- 3 garlic cloves
- 1 chilli, deseeded
- 1 large onion, diced
- 1 veg stock cube
- 250ml coconut milk, light
- 1 tsp cumin
- 1 tsp turmeric
- 1 thumb of ginger, finely chopped
- 400g red lentils

method
- Dice the onions finely, peel the ginger & garlic and mince. Deseed & finely slice the chilli. Heat the oil in a pan. Fry the onions until soft & translucent. Add the ginger, garlic & chilli. Fry for a further 5 minutes.
- Add the red lentils, ground turmeric, cumin, coconut milk, stock & 1lt of water. Bring to the boil. Simmer gently until the lentils are cooked & it has reached a thick soup- like consistency (add a little extra water if required)
- Serve with yoghurt and coriander (optional).
