
Lemony Chicken Skewers
ingredients
- 500g chicken breast
- 2x yellow bell peppers/capsicum
- 2x lemons (you could also used preserved lemons here if desired)
- 1tsp rapeseed oil
- 2 cloves garlic
- Pinch salt and pepper
To serve: Handful fresh parsley

method
- Start by marinading your chicken. Diced the chicken and add to a large bowl.
- Then grate in the garlic cloves and season with salt and pepper.
- Take one of the lemons and add the zest & juice to the bowl also, along with the rapeseed oil. Mix well to combine, then place in the fridge for around 1 hour to marinade.
- Whilst the chicken in marinading, cut the yellow bell peppers into chunks and cut the remaining lemon into quarters.
- Remove the chicken from the fridge and assemble your chicken skewers. Start by adding a quarter of lemon to each of the 4 skewers, then follow alternating between pieces of the diced chicken and pepper chunks.
- Heat a griddle pan over a high heat and once hot add your chicken. Brush over some of the marinade and cook for several minutes each side, until grill marks have developed and the meat is tender and cooked all the way through.
- Once cooked, remove from the grill and serve with a fresh side salad and our crispy, herby summer potatoes
