
Grilled Pineapple with Coconut Sorbet

This recipe is so simple to make. With only 3 ingredients, this dessert is deliciously sweet with just the natural sugars from the pineapple.
- 1 ripe pineapple (peeled and cut into wedges/batons
- Juice and zest of 1 lime
- 1 350g tub natural coconut yoghurt

method
- Start by making your 'sorbet'. Transfer the tub of coconut 'yoghurt' into a large freezer-proof container. Place the lid on and pop into the freezer.
- After about 30 mins, remove from the freezer and stir well. This will help to break up the ice-cryatals, resulting in a smoother, creamier texture.
- Repeat this every 30 mins until frozen..
- Meanwhile taken your prepped pineapple and place on a preheated griddle pan.
- Glaze with the lime juice and cook for several minutes each side until you get lovely charred marks on your pineapple wedges.
- Once ready, transfer to a serving dish, scoop some of the sorbet on top of the pineapple and top with a sprinkling of the lime zest and a fresh sprig of mint (optional).
