
Cripsy Herby Summer Potatoes
ingredients
- 600g potatoes
- 2tbsp olive oil
- Zest of 1 lemon
- 1 spring rosemary
- Tsp fresh thyme
- Pinch of salt and Pepper
- Fresh herbs of choice to garnish once out the oven - we used fresh mint and oregano

method
- Start by pre-heating your oven to 200C.
- Then parboil the potatoes. Place your potatoes (keeping them whole), into a large saucepan. Cover with water bring to the boil. Turn down the heat and simmer for around 5-10mins until slightly soft (but not cooked through). Be careful not to overcook here.
- Drain your potatoes then transfer them to a baking tray.
- Take a sturdy tumbler/glass and then gentle press down on each potato to squish them, but still keeping them in one piece.
- Drizzle over the olive oil, salt, pepper, lemon zest, rosemary and thyme, then place in the over to roast for around 45mins-55mins, or until they are super cripsy and a lovely golden brown in colour.
- Once ready, remove from the oven, transfer to a serving dosh and scatter over the remaining fresh herbs (mint and oregano), before serving.
