
Coronation Chickpea Sandwich Filler

This is a delicious vegetarian take on a classic. We've swapped the mayo for thick Greek yoghurt, to increase the protein. However, it also works really well with dairy-free coconut yoghurt. We've used rye bread in this recipe, but you could swap for any bread or wrap and it works great in salads or as a jacket potato topper too!
- 1 can chickpeas (drained and rinsed)
- 4tbsp thick Greek yoghurt (or dairy/milk-free alternative)
- 1 heaped tsp mango chutney
- 1tsp curry powder or korma curry paste
- 1tbsp raisins (optional)
- Pinch salt & pepper
To serve: wrap/salad/jacket potato/bread of choice and some fresh coriander or rocket to garnish

method
- Start by spooning the yoghurt into a medium-sized bowl.
- Then add the spices, seasoning and mango chutney and stir until well-combined.
- Add the chickpeas and raisins (if using) to the bowl and mix well to ensure they are evenly coated with the yoghurt and spice mix.
- Then add the chickpea filling mix into your bread/wrap of choice or pile onto jackets or salads - enjoy!
